St Patrick’s Day Fun!

By Sarah F.

With a last name like O’Boyle it’s hard not to get into St. Patrick’s Day. Throughout the years we have celebrated at many parades and hosted many brunches, but since we had babies it’s changed a bit. Now not only do we have to worry about the grown ups having a good time but now we worry about the wee ones too.

So while the grown ups are snacking on Irish Cheeses, Soda Bread and fancy Irish Coffee drinks the little ones can keep busy with these fun projects..

* Necklace Making with green, orange and white beads
* Coloring the flag of Ireland, then take to your local parade
*  Using cut out shamrocks make a wreath with a paper plate

Have a table set up with all these child friendly crafts so those little ones can keep busy during the celebration and also have some fun things to wear and wave during the parade or just wear around the house.

I always have to include some sort of recipe, this is a favorite of adults and children. It’s so easy and can be made ahead and frozen until the day of your party.

Chocolate Chip Scones

Ingredients:

1 cup Wheat flour ¾ cup of White flour 1/3 cup all natural sugar 2 teaspoons baking powder 1/2 teaspoon salt 5 tablespoons unsalted butter, chilled and cubed 1/2 cup miniature semisweet chocolate chips ¼ cup of milk 1 egg yolk

Directions:

1. Preheat oven to 400 degrees F (200 degrees C). Spray a baking sheet with nonstick cooking spray.
2. In a large bowl, whisk together the flour, sugar, baking powder and salt. With a pastry blender or a large fork, cut in the butter until the mixture resembles coarse crumbs. Stir in the chocolate chips. Mix in the milk to form a dough.
3. Turn out the dough on a floured surface. Pat or roll into a 9 inch circle about 1/2 inch thick. With a 2 1/2 inch fluted biscuit cutter, cut out 12 scones, pushing the dough scraps together for the last few, if necessary. Transfer the scones to the baking sheet. If you don’t have a biscuit cutter or if you just don’t feel like going through all that you can make little balls with the dough as you would with cookies and place on the cookie sheet, just flatten them a bit. Before placing into the oven beat the egg yolk and brush on each scone so they are nice and golden when coming out of the oven.
4. Bake in preheated oven until golden brown, about 12 minutes. Move to wire racks to cool.
