Tasty Tuesday
Hello! And welcome to Tasty Tuesday! Let's get introductions out of the way: My name is Steph, and I am a Chester County Mom of an 18-month old little girl (aka "Little Chica"). Not only am I a Chester County Mom, but my Hubby and I were both born and raised here. We love our hometown, and feel very lucky to still be hanging around here. I love many things: Hiking. Cooking. Baking. My Family. The smell of Home Depot. The tv show "Arrested Development." Ice Cream. And, of course, blogging. When I'm not posting here, you can find me at Confessions of a Stay-At-Home Mom, and during the regular Market Season, the West Chester Growers Market blog.
I'll be sharing with you recipes every Tuesday here at the Chester County Moms Blog. As you'll see from both of my other blogs, I LOVE cooking and baking. While I am learning to be more adventurous in attempting the creation of original recipes, I spend a lot of time collecting recipes from near and far. Many recipes have been in my recipe book for as long as I can remember, passed on from generations before me. I'm constantly adding recipes that friends and family share with me, as well as ones I stumble across in magazines and the internet. There are so many amazing recipes out there, and I have made my life purpose to find those recipes and put them all in one place so that we, as a community, can share and benefit!
Ok, maybe not my life's purpose. But it's a hobby.
I think the best recipes are SIMPLE and TASTY. As a busy mom, I need recipes that come together easily, but that do not sacrifice taste. So, when you come by every Tuesday (or check out my other blogs for recipes), that is what you'll find.
Today I'd like to share with you a recipe that came my way during my high school years. It calls for minimal ingredients you most likely already have in your pantry.
And it comes out SCRUMPTIOUS.
Chicken Diablo
- 4 chicken breasts
- 4 Tbsp butter
- 1/2 cup honey
- 1/4 cup mustard
- 1 tsp salt
- 1 tsp curry
Preheat oven to 375 degrees. Melt butter on the stove over low heat. Once melted, stir in honey, mustard, salt and curry. Place chicken in suitable oven casserole dish (spray with cooking spray). Pour butter mixture over chicken. Bake for 45 minutes.

I'm not sure what makes this dish so amazing. Perhaps it is the butter. But the chicken comes out of the oven SO JUICY and smelling super delicious. I serve this alongside Spanish Rice (I just use Lipton's "Fiesta Sides") and a veggie (corn or sauteed asparagus is choice).
Chicken Diablo is a great meal for kids. Kids are often turned off to strongly-flavored dishes, as well as overly bland dishes. Chicken Diablo is a great balance of both. Kids can also help by measuring and mixing the ingredients, which gives them ownership over the meal (and more likely to enjoy it!).
Let me know how this recipe turns out for you! I look forward to sharing with you my recipes every Tuesday. And, just maybe, you'll get to know a little bit of my life as well.
If you're lucky.
