We’ve been able to grill a few times in the past few weeks, and we are slated to grill if the weather is nice on Thursday. As promised, here is another great side dish recipe. This side dish goes well with most main meals. But if you are grilling, it’s especially nice to make, since you won’t otherwise be using your oven. I love this because it is SO SIMPLE, and it’s a healthier version of the usual fries we serve up for our families. That’s right – let’s feed our families healthy when we can help it!
Oven Roasted Potatoes
- 1 packet of Lipton’s Onion Soup Mix
- 4 medium all-purpose potatoes, cut into large chunks (about 2 lbs)
- 1/3 cup olive oil
~ Preheat oven to 425*. In a 13×9-inch baking or roasting pan, combine all ingredients.
~ Bake, stirring occasionally, 35 minutes or until potatoes are tender golden brown
Seriously, that easy! If you might find doubling the recipe is better for your family if they are particularly ravenous (or you have more than 4 people). And, like most kids, I enjoy dipping these in ketchup. The perfect side to most meals that you can feel GOOD about!
