- 6 eggs
- 1/2 cup mayonnaise
- 1 TBS mustard (I prefer spicy brown, but yellow works just fine)
- DASH of red wine vinegar
- Salt and pepper to taste
- 6-8 slices of bread, if you are going to make sandwiches
Peel shells off eggs. Discard 3 of the yolks. Dice remaining yolks and whites in a bowl. Add Mayo and mustard. Dash with vinegar and season with salt and pepper. Add more mayonnaise if the egg mixture seems to “dry” to you. Divide between sandwiches or eat plain.
- 1/4 tsp curry powder
- diced green olives
french fried onion rings
- 1/4 tsp of paprika
It’s that simple! And the add-ins are a great twist. I love adding green olives from time to time. So good!
