Yes, friends. The Great Thaw has begun. And I hope that nothing interferes with it’s efforts to make all the snow disappear. Hark! Did I notice some 40-50 degree days in the forecast for this week? Be still, my heart.
As the weather warms the air (and my heart), I continue to grow in my excitement for Spring and Summer. Last week, I shared a fresh Spring-inspired dish. This week, I’d like to post about my take on a fresh (and super tasty) salad for you to munch on as the snow whittles away to nothing. What is more fresh and Spring-inspired than a good salad, right?
This is my take on the Nutty Goat Salad from Peace of Pizza. I LOVE love love this salad, and order it almost every time I eat there. Since it was beginning to hurt my wallet, I decided to figure out how to recreate it at home. I believe my version is pretty darn good. Let me know what you think!
Steph’s Fake Take-Out Version of
Nutty Goat Salad
- 4 cups of mixed salad greens
- 1/2 cup craisins/dried cranberries
- 1/2 cup crumbled goat cheese
- 1/2 cup chopped pecans (**)
- 1/2 cup Ken’s Steakhouse ::new:: Creamy Balsamic Vinaigrette
In a large bowl, top greens with craisins, cheese and pecans. Top by drizzling the dressing over the salad. Serves 4.
** Ken’s Steakhouse Creamy Balsamic is what I found at the grocery store, and it was an almost perfect match to the dressing used in the original salad. Feel free to experiment with a different dressing.
The salad is light and fresh – but does not call for anything that is “out of season.” Make a larger portion for your lunch/dinner. Or use it as a side with a meat or poultry dish. Either way, it’s YUMMO.
I hope that by the time I write to you for next week, there will be no more white on my horizon, only the dead grass that has been hidden beneath for so many weeks. Here’s to the dream of Spring!
