Here is yet another Easy Weeknight Meal for your meal rotation! These little goodies were passed along to me from a good friend of mine. Her friends from college would always make this meal to celebrate roommate’s birthdays, thus the name, “Birthday Chicken.” I’ve never made it on a birthday (or any other celebratory holiday, for that matter), but I still call it that for posterity.
I like this meal because you can make the filling a day or 2 in advance, making the actual prep on Meal Day a cinch. I also appreciate this recipe because it’s a blank slate that you can dress up (ie: add ingredients to) according to your taste and palate!
- 3 oz cream cheese
- 3 T butter, melted
- 2 c. cooked chicken, cubed
- 1/4 tsp salt
- 1/8 tsp pepper
- 2 T milk
- 1/2 small onion, chopped AND sauteed
- 8 oz can crescent rolls
Super yummy! They are kind of like homemade gourmet hot pockets, aren’t they?
And if you throw in some veggies (roasted veggies? corn? olives? peppers? tomatoes? sweet potatoes??), it’s a great way to get your kids to get their 5-A-Day!
