Today’s Tasty Tuesday comes to us from one of our readers, Priscilla J. in West Chester. Priscilla posted this recipe on our Facebook page and it just looked too good not to share with everyone! 1/2 cup dried cranberries (2 3/4 oz)
3 tablespoons olive oil
1 tablespoon fresh lime juice
3/4 lb cooked chicken breast, cut into 1/2-inch pieces (3 cups)
1/3 cup chopped pecans or almonds
1 1/4 oz (3) celery ribs, thinly sliced
1/4 cup chopped fresh cilantro
2 tablespoons balsamic vinegar
2 tablespoons apple cider vinegar
1 tablespoon sugar
Soak cranberries in a bowl of warm water to cover 15 minutes, then drain well in a sieve and chop. Whisk together oil and lime juice in a medium bowl, then add cranberries, remaining ingredients, and salt and pepper to taste, tossing to coat.
